THE BRIOCHE STORY

Head Chef & Owner, Eduardo Bilardello, began his culinary career in Sicily at just 14 years old. He travelled and worked throughout Europe before making his way to Vancouver in 1990. After working in several establishments of varying styles, discovering the trends of the West Coast, and sharing his passion for cooking as a teacher in culinary school, Eduardo decided to ignite his passion into a new project.
Over the years, Eduardo immersed himself in diverse culinary styles, discovered the evolving trends of the West Coast, and shared his passion for cooking as a culinary school teacher.
In 2003, Eduardo ignited his passion into a new project. Over a span of two days, Brioche was born into a burgeoning, pre-trendy Gastown. Eduardo saw opening Brioche as an opportunity to incorporate traditional Sicilian cooking and culture into the West Coast context using fresh, simple, high quality ingredients. Brioche introduced a unique fusion of Sicilian and North American cuisines that captured the hearts—and taste buds—of locals and tourists alike.
As Gastown has risen in popularity, Brioche has closely followed, earning a loyal following for its delicious food, warm atmosphere, friendly service, and, of course, bloody good coffee. Now, the journey continues at our exciting new location on Columbia Street. Brioche invites you to rediscover the flavour and charm of our Sicilian roots in an elevated setting.
